Grilled Beef Tenderloin Skewers with Soba Noodles

Ingredients for Skewers:
2 Lb. Beef Tenderloin Tips
1/ 2 Cup Soy Sauce
1/4 Cup Brown Sugar
Salt to taste
Ingredients for Salad:
2 Whole Limes
4 Shishito Peppers
8 oz. Cooked Soba Noodles
1/4 cup Toasted Peanuts
1/4 Cup Radishes, sliced thin
1/4 Cup Carrots, sliced thin
1/4 cup Green Onion, sliced thin
1/2 Cup Coconut Sauce (see recipe here)
2 tsp. White Sesame Seeds
8-10 Cilantro Leaves

- In a bowl, combine Soy Sauce and Brown Sugar, mixing thoroughly.
- Coat beef tenderloins with the mixture, then refrigerate for 30 minutes up to 4 hours for marination.
- Once marinated, remove from the refrigerator and thread onto skewers, allowing excess sauce to drain.
- Preheat your gas grill to medium-high; avoid excessive flames. For charcoal grills, ensure medium-hot coals without visible flames. Oil grill grates to prevent sticking.
- Sprinkle a pinch of salt over the skewers and place them on the grill.
- Grill for around 5 minutes on one side for medium doneness. Flip the skewers and cook for an additional minute on the other side.
- While the skewers cook, cut the limes in half and add the cut side down on the grill.
- Add Shishito Peppers to the grill. These limes and peppers will be used to garnish the salad.
- Combine all salad ingredients, except cilantro and sesame seeds in the bowl, and toss well to combine.
- Transfer to a serving bowl and top with sesame seeds and cilantro leaves.
- Squize previously charred lime over the salad before serving.
- Garnish with blistered shishito peppers and serve immediately.
