Whistle Pig Bourbon Candied Pepper Bacon

How to prepare Candied Pepper Bacon

 Ingredients:

1 Package Neueskes Bacon

½ Cup Light or Dark Brown Sugar

2 Tbs WhistlePig PiggyBack 100 Proof Bourbon

2 Tbs Honey

Crackled Black Pepper to taste

 

 
How to prepare the dish
  1. Preheat oven to 425°F.
  2. Lay bacon in 1 layer on a parchment or foil-lined sheet pan, sprinkle cracked pepper in the amount you want on top of the bacon, and press pepper into bacon so it stays in place.
  3. Place bacon in the oven and cook until crispy but not burned, approximately 8-10 minutes.
  4. Remove the bacon from the oven and place in paper towels to absorb the grease from the tip and bottom, and make sure to remove all grease from the sheet pan as you will use it again to candy the bacon.
  5. Place parchment or foil on the clean sheet pan and place the bacon on the sheet pan in one layer.
  6. Sprinkle the brown sugar evenly on top of the bacon.
  7. In a bowl, combine the bourbon and honey, and then evenly drizzle this mixture over the freshly sugar-coated bacon.
  8. Place bacon back in the oven at 425°F and bake for an additional 4-6 minutes or until nice and caramelized.
  9. Remove from the oven and transfer bacon to a wire rack or something it can cool on from the top and bottom.
  10. Enjoy!
